Today, Gun Lake Casino (GLC) announced the addition of a new team  member, Steve Peterson, as Director of Food & Beverage Operations. Steve’s impressive work spans 25 years in Forbes, AAA, and Michelin-rated hotels, casinos, and restaurants. His  remarkable career includes over 50 hotels and over 130 restaurant openings across the US and  worldwide.  

Steve has traveled the world and enjoys sharing his passion for hospitality and learning about  people, culture, service, and the degrees of quality and excellence, valuing these experiences  close to his heart. Steve brings a dynamic industry background and experience with a range of  companies. He has helped create groundbreaking F&B concepts and consumer experiences in  

collaboration with top industry names, including Joel Robuchon, Tom Colicchio, Masaharu  Morimoto, Gordon Ramsay, and more.  

Steve’s background and experience also lends perfectly to our Phase 5 expansion as we look to  create F&B experiences that will be the talk of the town. From pool menus to beverage  program development to Michelin-starred dining experiences, Steve’s passion for caring for our  guests will help propel their experiences and make them want to return for more.

Though Steve is new to the area, he is familiar with Michigan. Early in his career, he was the  Executive Chef at the Historic Dearborn Inn, built by Henry Ford. In 2006, Steve helped  transition the original MGM Casino located in the old IRS building in Detroit to the newly built 

MGM Grand Casino & Hotel, helping revitalize the downtown Detroit landscape and ultimately  paving the way for the future of gaming in the city.
